Tropical Heat Fish Tacos

Small white corn tortillas

1 ½ lb Seabass or Fresh prawns

½ tsp of ground cumin

½ tsp Cayenne pepper

1 tsp Salt

¼ tsp black pepper

1 tbsp Olive Oil

1 tbsp Butter

½ tsp of coriander

Taco toppings:

2 medium avocado sliced

½ diced red onion

½ bunch Coriander without stems

Grated cheddar cheese

Lime for serving

Fish Taco Sauce Ingredients:

Novice Kitchen Mango & Smoked Pineapple sauce to taste

½ cup sour cream

1/3 cup of Mayonnaise

1 tsp of Garlic powder

2 tbs Lime juice

1) Line large baking tray with baking paper. In a small dish, add seasoning: In a bowl mix 1tbs Olive oil, ½ tsp cumin, ½ tsp Cayenne pepper, 1 tsp salt and ¼ tsp black pepper mix and pour seasoning evenly over Seabass or Prawns with a tsp of butter on seabass/prawns

2) Bake at 180c for 20 mins

3) In a bowl combine all the taco sauce ingredients and stir until well mixed

4) The tacos are best served warm, I prefer putting the tortillas in the oven for a couple of seconds or in the microwave. You can achieve the same results on a pan over a medium heat.

5) Final part and best part is to assemble the tacos – start with piece of fish then add remaining ingredients finishing with a generous sprinkle of cheddar cheese, spice up your taco with a couple of dollops of Novice Kitchen Mango and Smoked Pineapple sauce and serve with some lime wedges
