Balinese Jam Kare Udon
Ingredients:100g mince beef1/2 a tin coconut cream3 garlic cloves2 packets of Udon noodles1tsp coriander powderPinch of thyme3tbs curry powder1tsp paprikaSalt (to taste)1 stock cubeChives (garnish)Black & white sesame seeds (garnish)Olive oil Method:In a frying pan, pour in some olive oil and heat on a medium to high heat.Once the oil is hot add in the mince and fry until golden brown and crispyWhilst the mince is doing its thing chop up the garlic clovesOnce the mince is nice and golden brown pour it into a bowl and set asideTurn the heat down and add in the chopped garlic (you may need to add in a drizzle of olive oil) and fry until fragrant.Add the mince back into the frying pan and season with all the dry seasoning above including the curry powderStir well then pour in 1/2 a tin of coconut milk and let this simmer on a low heat for 5 minutes.Whilst the curry is simmering, boil some water and add you udon noodles to a large bowl or pot, then pour in the hot water and leave for a couple of minutes (don’t break the noodles.Once the noodles are cooked (3 minutes), using a pair of tongs wiggle the noodles until they naturally come apartAdd the noodles to the sauce and stir well until the noodles are fully coatedGarnish with chives, white and black sesame and a dash of chilli oil!
