Balinese Jam (Sambal) Wonton Soup
Ingredients:
2 Shallots
3tsp Balinese Jam
2tbs Laksa Paste
400g Coconut Cream
3tbs Light Soy Sauce
6 Wontons per person
6 Thai Basil Leaves or Basil Leaves
1Tbs Crispy Onions
2Tbs Cooking Oil
100ml Water
1 Chilli for garnishing

Method:
1) Start by chopping the shallots thinly into circles (save a pinch for garnishing)
2) In a Sauce pan, add in the cooking oil and heat this up on a medium heat for 30 seconds before adding the chopped shallots.
3) Fry the onions for 2 minutes then add in the Balinese Jam and Laksa paste, then stir until fully combined.
4) Pour in the coconut cream, water and soy sauce, stir until combined then leave to simmer on a low heat
5) Fill up a pot with boiling water to cook the wontons as per packet instructions.
6) Once the wontons are cooked, drain the water and place in a bowl.
7) Pour the creamy coconutty soup over the wontons and garnish with chillies, shallots, crispy onions and Thai Basil.
