Dark and light soy
In a bowl add the chicken thighs & drumsticks
Pour in 100ml light and dark soy sauce, 50ml rice vinegar or apple cider vinegar, 100ml water, 4 bay leaves, 5 cloves of garlic, handful of black peppercorn, palm sugar.
Mix this all together, cover the bowl with some cling film and place in the fridge to marinade for at least 2 hour.
After 2 hours in a pan pour some olive oil and heat on a medium to high heat.
Place the chicken skin side down to brown (about 5 mins each side)
Take the chicken out of the pan and pour in the marinade liquid into the pan, then add the chicken back. Bring this to a boil then cover with a lid or Aluminium foil and cook on a low to medium heat for 35 mins mins or until the chicken falls off the bone!
