Crispy Air Fryer Pork Belly with Thai Dressing

Pork:
1) Season the pork with a pinch of salt, then place in an air fryer at 200c for 15 Minutes and until the skin is golden brown.
Thai-Inspired Dressing:
Ingredients:
- 1 chopped shallot
- 1 chopped red chili (adjust for heat preference)
- 1 teaspoon tamarind paste
- 1 1/2 tablespoons soy sauce
- 1 teaspoon fish sauce
- Juice of 1 lime
- 2 tablespoons water
- 1 tablespoon sugar
- Fresh mint (a few leaves chopped)
- Fresh basil (a few leaves chopped)

Prepare the Aromatics: In a small bowl, combine the chopped shallot, chopped red chili, and fresh mint and basil leaves.

Mix the Liquids: Add the tamarind paste, soy sauce, fish sauce, lime juice, and water to the bowl.

Sweeten the Dressing: Stir in the sugar, and mix well until the sugar is fully dissolved.

Taste and Adjust: Taste the dressing and adjust the flavour balance if necessary by adding more sugar for sweetness, lime for acidity, or fish sauce for saltiness.

Serve: Slice the pork into bite size pieces and toss this in the dressing or even use it as a dipping sauce.
