Homemade PHO (Vietnamese Noodle Soup)


700g Short Ribs (Bone in)
2 Onions
1 Ginger
1tsp Coriander Seeds
4 Cardamom seeds
2 Star Anise Seeds
1 Cinnamon bar
1tbs Sugar
3L water
4tsp Salt
1tsp MSG (optional)
1 Chicken stock cube
Rice noodles (cooked as per packet instructions)
To Garnish - Coriander, Chilli, Lime, Fish sauce, onions
  1. Chop the onions and Ginger in half and grill until charred 
  2. In a frying pan, toast the coriander seeds, star anise, cinnamon until slightly golden (4mins)
  3. Wash the short ribs twice with some cold water 
  4. In a large pot pour in the water, add the short ribs, grilled onions/ginger and toasted spices
  5. Add the salt, chicken stock, sugar and MSG, cook on a high heat until boiling then turn the heat down to simmer for 2 hours
  6. Skim the bubbles and impurities along the way, this will make the broth clear.
  7. After 2 hours remove the short ribs and slice thinly
  8. In a bowl add in the noodles, garnish with coriander and chopped onions. Fill the bowl with the broth and top with the sliced beef.
