Easy Peri Peri Chicken
Ingredients:
1 Whole Chicken
2 Red Peppers
4 Sprigs of Thyme
4 Birds eye Chillies (add more/ reduce to taste preference)
3 Shallots
3 Cloves of Garlic
1 1/2tsp of Paprika
Salt
Method:
1) Chop your Peppers and Shallots into large chunks, then place in a bowl with a drizzle of oil and a pinch of salt
2) On a BBQ grill place the peppers and shallots, then cook until charred
3) Once all your veg is charred, place them in a blender with 2 chillies, thyme and blitz until smooth.
4) Taste the blended sauce and add 2 more chillies if not spicy enough and then season with salt to your liking.
5) Once you're happy with the flavour, use half of the paste to marinate the chicken for at least an hour, the longer the better.
6) Place the chicken on a BBQ and and char, you can either finish this in an oven at 180c for 20 - 25mins or until the juices from the breast run clear.
7) While the chicken is cooking pour the paste into a pan then add the paprika and place on a hob on a medium heat and stir then leave on a simmer for 5 minutes
8) The chicken should be cooked now, take it out of the oven and leave to rest for at least 10 minutes
9) on a plate add in the peri peri sauce, place the chicken on the peri peri sauce and garnish with chillies and thyme.
