Sage and Onion Stuffing with Chicken Croquettes



Chicken thighs or leftover turkey
200ml veg oil
Boiling water
Black pepper
Tropical heat sauce
1. Pour the stuffing into a bowl and add boiling water as per cooking instructions but do not place the stuffing into the oven
2. Season your chicken with salt, black pepper and 2tbs of tropical heat sauce
3. In a pan add a generous glug of oil, fry the chicken until fully cooked
4. Shred the chicken or leftover turkey and add to the stuffing bowl
5. Using your hands make balls with this mix, make them smaller than a golf ball
6. In a large frying pan pour in 200ml of oil and heat up until hot enough to fry the croquettes
7. Fry the croquettes until golden brown on all sides
8. Serve with a generous pinch of salt and some tropical heat
