Salmon with Lemon Orzo and Asparagus

Spring Chicken with Lemon and Asparagus
This dish is using some of my fave fresh British produce and it’s definitely a banger! As usual gone for minimal effort maximum flavour punch! Quick 35 mins dish (minus marinating)

Chicken thighs
Mixed herbs
1 lemon
1 shallot
1tbs capers
Chicken stock
1/2 glass white wine

Season your chicken with all the fry seasoning, marinate for at least 30mins
Place skin side down in a medium heat pan with olive oil and fry until the skin is golden brown
Dice your shallots, half the Asparagus
Once the chicken has been browned off, remove it from the frying pan and set aside
In the same frying pan add the diced shallots and fry until fragrant, pour in the 1/2 glass of wine add the chicken back in
In a pint glass add 2 stock cubes and hot water, pour this mix into the frying pan so there’s just enough liquid to cover the chicken.
Cook this for 20 minutes then add in the asparagus, capers and squeeze in 1/2 a lemon serve in a bowl plate and enjoy Novices
