Slow Cooked Lamb Stew

Ingredients:Lamb chunksShallotsSaltPepperOregano3 fresh tomatoes1tbs Tomato PuréeOlive oil1 glass of wine (white or red)Method:Season the lamb with salt, black pepper, oregano. Marinade for at least 30 minutes.In a pan pour in some olive oil and put the hob on a medium to high heat.Add in the lamb chunks and sear until the chunks are golden brown and crispy to really get the flavour into the lamb.Add in 1 tbs of tomato purée, mix this all in with the lamb and pour in your glass of wineAdd your chopped tomatoes, season to taste.Pour into an oven proof dish and cook for 2 hours or more.Serve with some warm bread and rice!!
