Winter Warmer Lamb & Ale Stew

Ingredients:Feeds 2300g lamb cubes1 bottle of ale1 large carrot1 bunch spring onions3 shallots1tbs tomato puréePinch of salt1tbs curry powder1 stock cube200ml hot waterMethod:Season the lamb with curry powder and salt and leave to marinate for at least 30 mins, the longer the better.Cut your carrots into large chunks, cut your spring onions in half (removing the root), half your shallotsHeat up a big pan with a lid to a medium high heat then add in about 2tbs olive oil.Once the pan is hot add in the lamb cubes and sear until all sides are a deep golden crispy brown then remove from the panTo the same pan add the tomato purée and stir until it becomes a deeper red colour then add in the spring onions, carrots and shallotsFry this for 5 mins on a medium heat then add the lamb back in.Pour in the bottle of ale and let this cook for about 5 mins, then pour in the water and add the stock cube and stir well.Remove the carrots from the pot so it doesn’t overcook and become mushy (add it back in 5-8 mins before the stew is finished)Place the lid on and let this simmer for 2hrs on a low heatGarnish with some coriander and enjoy with some hearty bread
