Easy Coq Au Vin Recipe


4 Chicken Thighs

100g Bacon Lardons

1 Large Yellow Onion

2 Garlic Cloves

1tbs Tomato Puree

200ml Water

1 Stock Cube

2tsp Paprika 

3 Sprigs Thyme 

3 Sprigs Rosemary

1/2tsp Salt

1/2tsp Black Pepper

1tsp Oregano

Chopped Mushrooms

1 Nub of Butter


1) In a bowl add in the chicken thighs and season with salt, pepper, paprika, Oregano and leave to marinate for at least 30 minutes. 

2) In a pan add the bacon lardons and fry until golden brown and crispy, then remove the bacon from the pan

3) In the same pan, place the chicken thighs skin down and fry until golden brown 

4) Whilst the chicken is frying, chop your onions, mushroom and garlic

5) Once the chicken is golden brown, remove the chicken from the pan and add the chopped garlic, mushroom and onion

6) Add the tomato puree into the pan and stir all the way through, add the bacon and Mushrooms back in

7) Pour in the red wine and cook for 2 minutes

8) Place the chickens back in, add the chicken stock, water, rosemary, and Thyme then cook for 20 minutes
